Game Night Sweet Potato Chilli Nachos

When you're in Beijing and on a diet there are limited things to do, so what do we spent our Friday nights doing? We play Beijing Monopoly!
So, how we got this is a little bit of a strange story. When we moved over here, we brought over our own UK version of Monopoly, because we're sad like that. We never once played it, but when we came to leave, it had been replaced with a Chinese version. We were completely baffled but the only explanation we could come up with that that our ayi (cleaner) fancied getting herself a London version, and who came blame her really. So we spent our Friday playing Beijing monopoly!
I've been looking for some recipes to make our diet less boring and let us feel like we have something to look forward to. I came across a recipe for sweet potato chilli nachos, and being the biggest nacho fan ever, was sold! They were absolutely incredible and it really felt like we were eating something naughty without all of the calories so thought I'd share the recipe with you. They were so easy!


You will need

❤ 1 1/2 cups of Slimming World Chilli 
❤ 2 sweet potatoes
❤ 1/2 can sweetcorn
❤ 1 spring onion
❤ 1 tomato
❤ 60g cheddar cheese
❤ a few jalapeƱo peppers (optional)
❤ 1 dollop low fat Greek natural yoghurt

Steps

❤ Pre-heat over to 200C
❤ Thinly slice sweet potatoes and season with salt
❤ Place sweet potatoes on a baking tray and bake for approx. 30 mins.
❤ Heat chilli and corn 
❤ Sprinkle ingredients on top of sweet potato
❤ Add yoghurt to top of nachos
❤ Devour them!

☆ Tip - Watch the sweet potatoes carefully as they bake - they burn very easily!
I mean, it wasn't exactly a wild night or anything, but we had fun and it was something a little different.
