Healthy Ham, Mushroom & Broccoli Quiche

I’ve been eating healthy for around a monthnow but the one thing that I always seem to struggle with is lunch. Whatever I have never seems to satisfy me and I always want more. The problem is that at work we have 5 food stations serving some of my favourite foods so trying to avoid them is tough. I made this Slimming World crustless ham, mushroom and broccoli quiche  and it’s so incredible and have saved my lunch time bad choices.

Based in Beijing, I’m incredibly lucky to be close to so many fantastic countries and there are so many I want to visit before I leave Beijing. I feel like I need to tick off as many as I can as once I leave this part of the world, I’m not sure how soon I would venture back.

10 TV Shows You Need to Rewatch Right Now


Lately I've found myself out of TV shows to watch, which really shows how much I have sat on my ass and watched TV during the winter months. Living in Beijing means that I don't get to watch TV shows as they air, which is one of the worst things about expat life, I won't lie. I mean, do you understand how much it drives me crazy seeing Twitter go wild about my favourite TV shows and I have no idea what is happening?

My Reverse Bucket List

Anybody who reads my blog or knows me at all will know that I’m a huge fan of a good list. My most used App is Wunderlist (even more than Instagram) and I just love ticking things off, it’s so satisfying. It’s less so when you don’t get to tick things off though and I’ve noticed lots of reverse bucket lists going around lately so I thought I would write my own. 

It’s easy to get so down and be hard on yourself for the things you haven’t achieved and we never take the time to look at the many things we have achieved. We really do need to be kinder to ourselves, and so with that in mind, here is my reverse bucket list. 
  Graduated University with a BA (Hons) in Primary Educatio(which I thought I might not achieve at times)
  Spent a summer as an au pair in France
  Travelled the USA
  Took a girl’s holiday to Costa Brava
  Celebrated a crazy 18thBirthday in Blackpool with my besties
  Completed my NQT year
  Survived my most challenging year and a half of teaching at VRCPS (but learnt so much and loved every second) 
  Celebrated Christmas in New York City
  Has the best time at the world’s largest water fight, Songkran in Chiang Mai
❤  Lost four and a half stoned (and re-gained it)
  Spend a year living as an expat in Qatar
  Moved to Beijing, China
  MarriePaul(even if it wasn’t the most conventional wedding)
❤  Lead a Year 1 teaching team
❤  Celebrated New Year’s Eve in Paris
  Visited Munich Christmas Markets
  Had the cheesiest, most fun holiday in Benidorm with my bestie
  Visited Hawaii
  Took my mam to Sorrento
❤  Saw Daughtryin concert

  Taken a ferry trip to Amsterdam
  Celebrated St Patrick’s Day in Dublin
  Spent the most fun girl’s weekend in Dublin

❤  Watched lots of shows on West End and Broadway

  Completed a TEFL qualification
❤  Ran my own online business (for a while)

  Attended London’s New Year’s Day Parade 
  Visit the Lake District during Autumn
  Had the best time in Las Vegas
❤  Watched the sun set over the sea
❤  Rode in a limo just for me
  Attended prom

When you look at all of my achievements so far, it doesn’t look half bad does it? I so recommend writing a reverse bucket list, just to help you realise that even if you don’t have all of your shit together, you’re doing alright. Hell, you’re probably still doing bloody great!

Dealing with Expat Guilt

There are all sorts of reasons why people choose to become an expat, often through choice but sometimes not through their choice at all. Being an expat comes with many benefits and some amazing experiences, but as soon as you make the decision to move abroad you battle with all sorts of emotions, and the underlying one for me has been guilt.
