Healthy Ham, Mushroom & Broccoli Quiche

I’ve been eating healthy for around a monthnow but the one thing that I always seem to struggle with is lunch. Whatever I have never seems to satisfy me and I always want more. The problem is that at work we have 5 food stations serving some of my favourite foods so trying to avoid them is tough. I made this Slimming World crustless ham, mushroom and broccoli quiche  and it’s so incredible and have saved my lunch time bad choices.

So this quiche is the quickest and easier thing in the world to make. Everybody knows I’m probably going to win world’s worst (and messiest) cook one day so I’m all for convenience. 


Serves 4

You Will Need
  200g mushrooms
  1 onion
  2 broccoli heads
  1 garlic clove
  7 eggs
  1.5 cups skimmed milk
  1 pack low-fat ham
  28g low-fat cheese
  low calorie cooking spray

What To Do
  Dice onion and chop mushrooms and broccoli into chunks
  Spray a frying pan with frylight, add ingredients place on a low heat
  Crush garlic into pan and mix with ingredients, frying until lightly cooked
  While the veg is cooking, chop ham into small squares
  Layer vegetables and ham in a bake-proof tray
  Mix eggs and milk together in a bowl (I didn’t measure the milk, but I would estimate 1.5 cups) 
  Pour egg mixture over veg and meat 
  Sprinkle low fat cheese over the top 
  Place in over and cook for approx. 180 degrees (or until egg has turned solid and top is nicely browned)
As you can see from the picture, I slightly burnt the top of mine. I’d love to blame the new over combi that we just got, but in reality I would have probably burnt it anyway! 

You need to give this quiche a try! It’s so easy, super quick and tasted amazing! It has honestly saved my lunch-times from becoming very naughty and filled with all of the bad things (mostly involving cards with carbs and a side of fried things)
